A new kind of cookie!

I recently discovered I loooooove avocado! :drool:

A friend mentioned that they used it in a cookie recipe. :screwy:

Being unemployed this sounded like a perfect Tuesday afternoon project! :whistle:

110g/1/2 cup butter, softened

125g/ 1/2 cup peeled, mashed avocado flesh (about 1/2 avocado)

100g/ 1/2 cup packed light brown sugar

100g/ 1/2 cup sugar

1 egg

1 teaspoon vanilla

150g/1 cup plain flour (or whole wheat pastry flour)

1 tsp baking soda

1/2 tsp salt

180g/2 cups rolled oats

50g/1/2 cup shredded coconut (optional)

170g/6 oz chocolate chips (or chopped chocolate)

1/2 cup chopped walnuts (optional)

1. Heat the oven to 190C/375F/Gas. Beat the butter until smooth, add the sugars and beat for 2 minutes, or until light and fluffy. Gently beat in the avocado until blended.

2. Add the egg and vanilla extract and mix thoroughly.

3. Sift the flour, baking soda and salt into the butter mixture and mix well. Stir in the oats and coconut. Fold through the chocolate chips and walnuts (if using).

4. Drop into tablespoonful-sized balls onto a baking sheet and bake for 10-15 minutes, or until lightly golden and crispy.

Let me just say.....some of the yummiest cookies I have ever tasted! :drool:

Well, I'm not one too toot my own horn BUT someone else tried one and said they were the best cookies they had ever tasted. :idk:

I think it sounds great...and the avacado is like cottage cheese....you can eat it savory or sweet so this might be really good....just don't think about whats in side, that's all. If its good, I will use it in the catering business and call it the CrazyKel in the menu!!

ooh that sounds awesome, i love avocados and i have shredded coconuts at home. Actually i have all the ingredients, so i would have to make that after i distibute all the rum cakes i promised everyone.

Guacamole, a dip made from avocados, is originally from Mexico. The name is derived from two Aztec Nahuatl words - ahuacatl (avocado) and molli (sauce).

Bah.. pansies.. avocado is good for you.
My mom used to eat the damn things with a spoon, right out of the shell.
It grossed me out back then.
And then I worked in a Mexican food restaurant and had to make and taste the guacamole on a daily basis. Maybe it's an acquired taste, because I love them now.

I thought they were fruits?

I always have one or 2 avocados sitting at home, i put them in everything, salads, mash them with tuna and mayo, eat them straight, put them in my eggs, I love them!
