Depends on the make and quality of the 1911. I had "workhorse" AMT in 10mm that came in SS but but was pretty well scuffed up when I got it then I fitted a beaver tail safety and had it gun coated and it looked and ran great.

I prefer stainless over blued over nickel. For me nickel is way too bling and blued is a bit too utilitarian. Stainless fits somewhere in between. BTW, mine is stainless.

i think im gonna go blued with beaver tail duck tail whatever and rubber grips. I was gonna go an amt hardballer but supposedly they jam like a mofo and im not willing to fix it.

I like blued or stainless, I don't want a shiny gun peeking out of concealment, rather a black one that blends with my clothing if my jacket gets lifted.

For a concealed hand gun, blued. For a hunting rifle where you are out in the weather. Stainless Steel.
